My simple guide to make a healthy fruit cake during the summer.


Start by preheating your oven to the temperature specified in your fruit cake recipe. Typically, this is around 350°F (175°C). Gather all the ingredients for your fruit cake. For a healthy version, consider using whole wheat flour instead of all-purpose flour. You will also need a variety of fresh fruits such as berries, cherries, and citrus fruits. Wash and chop the fruits into small pieces. Make sure to remove any seeds or pits.

In a mixing bowl, combine the whole wheat flour, baking powder, and a pinch of salt. Mix well to combine the dry ingredients. In a separate bowl, whisk together the wet ingredients. This may include eggs, oil or melted butter, honey or maple syrup for sweetness, and any additional Flavors such as vanilla extract or almond extract. Gradually add the wet ingredients to the dry ingredients, stirring gently until just combined. Avoid overmixing, as this can result in a dense cake.

Gently fold in the chopped fruits into the cake batter. Make sure they are evenly distributed. Grease a cake pan with a bit of oil or line it with parchment paper to prevent sticking. Pour the cake batter into the pan and smooth the top with a spatula. Place the cake pan in the preheated oven and bake for the recommended time. The baking time may vary depending on the size of the cake pan and the recipe, so make sure to check for doneness by inserting a toothpick into the centre of the cake. If it comes out clean, the cake is ready.

Once the cake is fully baked, remove it from the oven and allow it to cool in the pan for a few minutes. Then, transfer it to a wire rack to cool completely.
