Egusi is an African term for melon seeds which are used in cooking different types of melon soup. Egusi soup is eaten with fufu, pounded yam, etc. These seeds are high in fat and protein, and they are an important part of West Africa cuisine. I have decided to cook my egusi soup just the way I like it. The recipe below will show you how I make my Egusi Soup.
- 3 cups of egusi (melon seeds)
- 1 cup of sesame seeds
- 1 cup palm oil
- 2 spoons fresh Iru
- Salt
- 6 cubes of Maggi
- Ground crayfish/ fish powder
- Oven-Dried Meat, snail, and fish
- fresh pumpkin leaves
- fresh hot chili peppers
